Diabetic dinner recipe # 1

FETA CHEESE BURGER

A pound of lean ground beef

1/ 4 cup egg product

2 tablespoons water

1/3 cup rolled oats

1/4 teaspoon black pepper

1/8 teaspoon salt

2 teaspoons Dijon mustard

1/3 cup crumbled feta cheese

3 English muffins cut in half

Tomato-Basil Relish

Fresh basil

  1. Mix egg product and water lightly together in a bowl. Add the oats, pepper and salt, mix and add the beef and mix thoroughly.
  2. Divide the mixture in eight thin patties.
  3. Spread mustard and add feta cheese on top of four patties and cover with the remaining four patties. Seal the sides.
  4. Pre heat gas grill. Over medium heat, grill each side of the patties for 12 minutes.
  5. Serve with toasted English Muffin and top with Tomato Basil Relish and fresh basil.

Diabetic Dinner Recipe 2

CHILI STEAK AND SALSA

8 ounces half inch thick steak

1 tsp. chili powder

1/2 kosher salt

1 tsp. extra-virgin oil

2 plum tomatoes

2 tsp. lime juice

1 tbsp. chopped cilantro fresh

  1. Slice steak in two. Combine chili powder and salt on both side of steak.
  2. On a skillet, heat oil and cook steak over medium heat for 2 minutes on each side.
  3. Remove steak from skillet and set aside on a plate.
  4. Add the rest of the ingredients to the pan and stir until cooked.
  5. Remove from heat and stir in cilantro.
  6. Serve steak topped with salsa.

THE PEACH COBBLER

1/4 cup Heart smart Bisquick

1 Large Egg

1/2 cup skim milk

2 packets Low Calorie Tropicana Slim Sweetener

8 oz. Lite Diced Peaches

  1. Drain the peaches and divide into four oven safe dessert glasses or ramekins.
  2. Combine egg, bisquick, skim milk and Tropicana Slim Sweetener in a small bowl and pour onto the four individual peaches, dividing equally.
  3. Bake at 400 degrees for 15 minutes or until brown.
  4. Top with fat free cool whip
